With almost four decades of experience baking chicken pies since his HP days, Chef Don Lim gave us the inside scoop on what it takes to make a great chicken pie. Here are some tips on how to make your own perfect chicken pie.
The first step to making a great chicken pie is to start with high-quality ingredients. That means using freshly cooked chicken chunks and vegetables that are in season, and of course high quality butter, flour and eggs.
The second step is to mix the dough by hand, and then followed by a powerful industrial dough mixer so that the dough is consistent. Chef Don always reminds us that is of utmost importance so that the pastry is able to achieve the perfect flaky texture.
Once the dough is mixed, it needs to be properly sheeted and layered multiple so that it can be rolled out evenly, and more importantly, this adds to the texture of each flaky layer.
After that, the handmade dough is rolled out and left to rest for a couple of hours and portioned out precisely by weight. The cooked filling is then added to the moulded dough by hand.
Our Chicken Pie filling includes a secret blend of closely guarded herbs and spices that gives the pie its unique flavor.
Once the pies are filled, they are baked in bespoke small batches in our in-house deck ovens at 39 Tyrwhitt Road so that each one comes out perfectly cooked.
