The "發" (pronounced "fā") in the middle of our logo is actually part of Chef Don Lim's Mandarin name.
Being born to a large family of 9 in the 1950's, a formal education was not an entitlement - it was a priviledge reserved for only the eldest few children. Don was the eighth child, and he had to work his way up from young, until he found his calling in the pastry room.
Don was soon in-charge of baking cakes, tarts, and various types of pastries in 1983, during his time at Hewlett Packard's in-house cafeteria as a chef. He was tasked to prepare pastries for his then boss Wong Kan Seng (who eventually became Deputy Prime Minister).
In 2000, he started his first pie shop at Far East Square.. which quickly grew to a sprawling restaurant opposite the street at China Square Central. This eventually expanded (a little too fast) to multiple branches both locally and overseas. In 2015, he sold away that brand which has since changed hands multiple times since. Part of that agreement was that he couldn't bake pies for a number of years - which led him to sell crab and prawn dishes at a coffee shop to make a living.
He is now back baking his signature Chicken Pies along side his well-loved seafood dishes at Chicken Pie Kitchen & Don Signature Crab, only at 39 Tyrwhitt Road, Singapore 207538.
